What's the correct method for changing gears when turning at a junction from a stop sign?
1)Pull out in first and continue in first till car is straight on the road again, then change to 2ND?
    2) pull out and begin turn in first, change to 2nd gear half way and continue,
    3) pull out in first and quickly change to 2ND before turning?

Hope what I'm asking is clear!
Problem I'm finding is on bigger junctions I need to change gear halfway through the turn and it feels unsafe to have a hand off the wheel while turning..

There is nothing unsafe about changing gear while turning. To be honest the question is difficult to answer on here, and it should be something you ask your instructor. If the corner was very tight, it might make sense to remain in 1st gear as you will be moving very slowly until you are around. But if the corner is less tight there should be no reason to linger in 1st gear.
