Dublin to Sligo stop off?

Anyone know where is good to stop off for a break and maybe some veggie food along the Dublin to Sligo stretch? We will have two young kids with us if that makes a difference.

This is probably too late but Longford would be about half way. A well regarded restaurant in Longford is the Black Olive on Ballymahon Street that usually offers 5 or 6 veggie main courses on its menu.
