I’m trying to gather a list of established & reputable Irish companies that offer security consulting, risk analysis and penetration tests.

I agree with hmm and since I can see this thread going down the road of people saying things that I fully agree with and yet don't want to have to answer for by having comments about named companies published on our website I'm going to close this thread ...
