Do you cook with garlic paste? Or always mince your own garlic?

I always use fresh garlic. Bash it with the knife? Then peel and chop finely.

My minimum portion in a recipe is one bulb.

Does garlic breath not concern you?

I was making a meat dish last night with salad, so I used half the bulb in the meat dish, the other half in the salad.

Curious after whether I should have just thrown a full bulb into each.

But I'm always worried about blasting someone with garlic breath if I overuse.

You can be very generous with it in cooked dishes. I do a lot of curries.

But I'd use a lot less when it's raw, e.g. salad or hummous. Too much raw garlic for sure can lead to that breath. You can sometimes smell it in your perspiration!

No. I tend to chop or sprinkle garlic from a dispenser.

Fresh garlic, garlic paste and garlic granules all have a home in my house. All three have different flavour profiles.

There are times when paste/granules are handier. So if you want kebab shop kebab sauce, then a mix of granules and paste in youghurt with a pinch of salt and oregano and a splash of water, let it rest for a bit and bingo. I also use them for making garlic bread, using a mix gets a better flavour.

I don't bother to mince garlic by hand, either it gets chopped a bit and pressure/long cooked, or it goes through a garlic press.

Probably use fresh garlic slightly more often than paste/granules,

One bulb? How many are you feeding?

Most I would use is one large clove or a couple of small ones in a meal for 2.

As a garlic lover, the tubes are dogsh1t. Avoid like the ebola virus.

Metal press or chopped fresh garlic the only way to go.

But please please, remove the germ. We don't get fresh garlic here so that big green thing in the middle needs to go. Its essentially rotten. It gets really bitter and thats what gives people bad garlic breath. And messes up the taste of your food. It also jocks up your stomach bigly.
