Going back to doing my own painting after a number of years of hiring someone to do it.
The last painter used a single coat rather than undercoat and gloss - and, I think it looks better.
Is this the way to go?
If so, can you recommend the best paint to use?

I generally use Dulux paints and would use a water based gloss paint for interior surfaces. One thing, if I'm painting over a dark could to a lighter colour I'd use an undercoat once or maybe a second coat too. For rads, I still use an oil based undercoat and gloss.

You should ALWAYS use an undercoat before applying gloss on previously glossed surface. The only exception to this is, if you apply a 2nd coat of gloss before the 1st coat has "cured". Think the next day.

Second the op on Dulux gloss, by far the best on the market, however I hate the waterbased version, especially in white. Looks muck compared to oil based.

Not sure what your previously painter used, but most if not all the "once" and "non drip" painted are rubbish
