Do you make your own Mayonnaise?

    Home made mayonnaise is so much better than shop-bought mayonnaise but it doesn't have the near-infinite shelf-life people have become accustomed to.

    We usually make our own, but will have a backup jar of Hellmans in the fridge. Not with olive oil though, for some reason I just don't like the flavour, usually use rapeseed instead.

    I do indeed, making some this evening in fact as I have a few spare egg yolks.

    While it doesn't have the shelf life of a bought one it does last quite a while, I usually divide up a batch and make tartare sc/pink sc out of some, the tartare sauce especially lasts a very long time probably the extra vinegary bits!

    I use half sunflower and half very mild olive oil, too much olive oil and the flavour overpowers the mayonnaise.

    I love homemade mayonnaise for egg sandwiches and especially for fresh salmon sandwiches too, always the way we had them as children so it's kind of my comfort food for those sandwiches. Nice soft crappy bread needed though lol

    All peanut oil here, and the whole egg immersion blender one by Kenji Lopez-Alt. About once a year, or so, specially for belgian style frites. Use the tail end of it up in egg mayo for himself.

    I've never thought of making my own Mayo, how long do you get out of it before it turns?

    I do make garlic mayo for pizza dipping, but I just use shop-mayo and add some more olive oil with crushed garlic.

    Two or three weeks without any issues before. That being said, I usually use it up by the time that's done.

    I've been making mayonnaise at home for some time, but also sometimes buy a bottle of ready-made.

    Oil, an egg, grated garlic, lemon juice and salt all go into a jar and are blended in seconds with the stick blender.

    I also make a vegan one with soy milk instead of egg and it turns out well! I got that idea from a YouTube channel that I watch which shows how industrial food is made. The vegan mayo was being used in ready-made sandwiches.

    I just made some using

    I just made this for the very first time and it worked great. Didn't have vegetable oil so used mild olive oil instead

    Jar of Helmans that had just ran out is now full of lovely homemade mayo. (I added extra garlic so it's more of a garlic mayo)

    You can make mayo with whole eggs, it'll just not be as rich and will be runnier.

    Yep never with olive oil- a neutral tasting vegetable oil is the way to go- rapeseed oil works fine - olive oil makes it bitter tasting for some reason - too overpowering

    I have never timed how long it lasts, never had some go off but at a guess I have a batch a least a month, tartare sc maybe even longer! I do it the way I learned many years ago working in a hotel, bottle of oil propped up to allow for a slow drizzle, very handy. Half and half sunflower oil and mild olive oil to convince myself it's a little healthier than it is!

    So you need to be doing it wiht a stick blender/immersion blender, and it really is about a minute, it's really obvious when it's thickened. You also need a narrow jar (like the one came with the stick blender first) to get the height w/o having to make a litre
