I drive an 08 1.4 petrol VW Golf.

Last year I paid around €700.00

This year they quoted me €775.00.

I looked around and saw nothing special.

I'm 31have my full licence less than two years and a four years no claims.

However I did get a qoute for €560.00 but they only offered step back no claims.

Would I be better off paying the extra to have it fully protected or will the step back be good enough.

Late reply but personally I would opt to have the bonus fully protected. If you were unlucky enough to have a claim that 30% difference will be quite a bit extra on your next renewal.
