How long would a deputy 'act up' as a principal typically? A few months,? A full school year? Two years? Are patrons not anxious to make a permanent appointment? just curious as to what is typical...

It would depend on the circumstances that had them acting up. They will act up until something changes in those circumstances. If the principal is on sick leave, they will act up until they principal returns, or resigns, at which stage a replacement would be advertised for.

Depends on the circumstances. My principal had heart problems about 10 years ago and was out for about 6 months, so the DP was acting up for that duration and an A post holder was acting DP for a period of that time. You can't make a permanent position where a person is already in that post. If they are on approved leave, which sick leave would be in this case, then the person acting up can't be made permanent.
