Is there any downside to turning mains water off while leaving oil burner running (on timer) in holiday home over winter months?

If the system has no leaks it should be OK. Of course you run the usual risks associated with leaving anything running when away for long periods.

I'd advise having it serviced beforehand and let service person know what you intend to do.

I'd also advise checking this with your insurance company. They might prefer you to use an oil-filled electric radiator or similar.

A holiday home next door to me has this exact set up for heating for over 20 years and no issues so far. Regular servicing of boiler is important and of course ensuring that the oil tank is in a secure place....away from prying eyes😉
