İstanbul: Stay in Fatih/Eminönü, it's the 'old town', has all the major sights and is well connected to the rest of the city. Alternatively, you could stay in Kadıköy, it's on the Asian side but a short boat ride to Eminönü, and a lot more liberal.

Learning the name of the country might be a good start 😉

We stayed in the Hotel Arcadia Blue in the Fatih area. It was a lovely hotel and things were walkable from there. It has great views over the Hagia Sophia mosque too. Went to the Blue mosque and Galata Tower too. Take a cruise on the Bosphorus. I don't know if you're male but if you are get a haircut and a shave. I got a great one in Kadıköy. Think it came to less than €10 but it was a great experience. A comparable service here is a good bit more. The Kadıköy area is great for a wander around too.
