It depends very much what your requirements are, so what features do you need, how much time are you going to commit to doing your accounts and your competence in using a computer for business needs.

Say someone requires a bit more than tracking a small number of transactions in excel but not yet at the stage of needing to upgrade to the likes of Sage 200, ect. It is a standard type of business so no SORP accounts. They are computer literate and would be able to learn fast enough but don't want to learn double entry initially but do want to enter their income and expenses and run reports with the ability to progress their knowledge over time.

Lets say for example someone looking to set up a coffee shop.

Would you be picking from the likes of Xero, Sage, QuickBooks, ect and how would you differentiate between them?

For a coffee shop check the integration between the EPOS system and the accounting software. Xero possibly your best bet, seems to have the most integrations which will make your admin easier.

I've heard that Xero has some issues with Irish tax
