Where can I buy deli style sausages?

You know those fat greasy ones from Centra or basically any shop deli. They're always completely browned all over and extremely savoury. Are they from some sort of catering company?

Probably about 2% meat.

When I buy them from the fridge and cook them myself it's not the same. I've tried loads of brands.

I'd imagine deep frying is what gets the all over brown colour.

I'd also imagine a HUGE salt content contributes to their extreme tastiness (as well as the strength and depth of your hangover!!)

As to where you'd source them, no idea I'm afraid!

My local Centra doesn't have a deep fryer. Unless they're hiding one in the toilet or something.

They probably cook them in the oven. Sausages cooked in the airfryer taste the same. Try aldi frozen sausages in the airfryer and you'll have your typical deli counter breakfast roll sausage flavour. But after they're cooked you got to let them sit for a few hours in a warm steel pot to get the exact deli sausage quality

Well my local Centra definitely oven cook them from frozen...as I've been told when I've been in at opening time and need to wait a couple of minutes for my roll!!!

Ok we're getting close. But where the feck do they buy them? They're definitely not your average clonakilty sausages.

In Deli's they have industrial ovens so that's why there properly cooked all over and nice brown/black color all over. Even if you get the same brand your not going to be able to cook them the same. You'll dehydrate the crap out of them in your own oven.

The Supervalue brand sausages are probably the best you can get and expensive enough.

Ever notice in hotels are restraunts the sausages are twice as nice as what you can do yourself.

Check for local ones, the likes of Musgraves for example.

You might have to buy a large quantity so make sure you have the freezer space.

This. Centra are owned by Musgraves so no doubt get their sausages in wholesale from them. Cuisine De France also sell wholesale as well i think, a lot of the pastries etc are provided by them

They are precooked and flash frozen. Then reheated in the oven in the stores.

So how can I get my hands on these delicious sausages. I am not a shop so I can't order a box of them. I don't think regular joes are even allowed to buy stuff from wholesalers.

Could you ask your local deli to sell you some from the freezer and then cook them at home? I'm sure they wouldn't mind.

OP I've seen a wholesale food company called Pallas Foods delivering to a Spar before and you see their trucks on the road a fair bit around Dublin anyway. It could be them though Im not sure if they sell direct to the public, they might if you go to their distribution centre to pick it up.

Also dont be expecting them to be Irish sausages, I remember a few delis (both Spar and Centra) were still serving sausages and rashers when we had the ban on Irish pork a few years ago so the sausages they're using are imported from somewhere else. iirc the chicken 'fillets' many of them use come from Thailand

My local butcher has those in his frozen section, I presume bought in from the likes of Musgraves. You can buy a bag of maybe 25 sausages and just bung them into the airfryer or oven. The butcher also has the regular 'butcher's sausages' but I reckon you're looking for the frozen ones. They're quite nice, and handy for somebody like me who lives alone. You can have as few or as many as you want.

The heat lamp keeps them warm after they've been rolled on the griller. The skin is a little thicker and snaps when you bite into the sausage.

went to a Centra today on your recommendation, and their sausages are very tasty indeed - i don't normally get deli sausages, but these are the best i've had from a deli

you'll find almost every deli will have a high speed tray oven - about the size of a large fridge.

Cooks virtually all the various foods including the breads with a single press of a pre-programmed button. Hotels use the same ones when catering for an event - some can take 20 trays of stuffed chicken and bacon portions.

as for supply - your local butcher will supply decent chunky sausages. the trick is not to prick them with a fork so that the fat which is where the flavour is stays in the sausage. Also oven cook at high temperature.

If you're frying them on a pan you can get a pretty even brown if you roll the sausages between your hands to even them out first, before you put them in the pan. This will allow them to roll around in the pan freely and not get stuck on the one side.

Olhausens are a huge supplier into catering. Try their retail products for any similarity.

This might be out of date but at one point Loughnanes of Galway were supplying catering sausages too Musgraves.

You could buy a box of 50 (8 to a pound ) for about 10 quid in the cash and carrys.

I just tried Aldi frozen sausages. You're right, I stuck them in the oven and they were pretty dehydrated on the outsisde. Tasted close enough but not really enjoyable. Cooked them at 200 degrees in a fan oven.

So how do the delis / restaurants / hotels etc. keep them so moist if they're cooked in an oven? Higher temperature?

This is my new goal in life, to replicate these deli sausages. Picked some up today from the hot counter in Tesco and they were so unbelievably moist and juicy.

Get the tesco / aldi / lidl butcher style jumbo sausages (fresh). Into the pre-heated oven at 200, with bowl of water in the bottom to keep the moisture in.

or you could spend a mere €5.000 - €7,000 on one of these boys and its a simple press of a pre-set button. Everything can be done in these and at the same time. Sound goes off when a particular tray is ready - so with sausages you click "sausage", select the tray position and put the tray in. When alarm goes it tells you which tray is ready to be taken out.

OP here. Just a quick update.

Afrer a few failed attempts in the oven, I deep fried the Aldi frozen sausages.

Turned out almost exactly like what I wanted. Deli counter / hospital breakfast style.

Here's a pic:

I may have overcooked them a tad. They're surprisingly not greasy. For authentic taste I probably need to let them sit in a bain Marie for a few hours and get soggy.

I've stuck two of them into the freezer to see if they can be revived tomorrow.

OP here. After literally months of experimenting... you need to deep fry your regular jumbo sausages from the fridge section of Aldi/Lidl etc. Lidl ones are the tastiest. And they have to say "Jumbo" on the package.

My new routine is to deep fry a full packet of sausages and stick them in the freezer. Any time I need a dose of sausage, I just microwave them for 2 minutes and they're good to go. Proper deli style.

I got some insider information from a deli practitioner that those delicious sausages come in pre-deep fried and flash frozen. So all they do is heat them up in the oven. The only difference is, the deli sausages are probably 30% pork, but you can do the same thing with 70/80% pork from Liddle's. They don't taste greasy at all. Probably healthier than pan frying.

For anyone coming across this I have been on a mission myself to find the answer to this question. Its a mystery, wrapped in an ingma, locked in a puzzle, hidden in a conundrum! No soul truly knows.

After years of searching my local deli told me they use Granby sausages. They come pre cooked and are then heated up. I have found Dunnes Stores sell these same pre cooked sausages in packs of 8 in the fridge section beside the sausage rolls and microwave burgers etc, they are called Granby of Dublin Easy Cook Sausages.

I'm looking for pre- deep fried ones. Anyway, I ended up asking the deli counter to give me a bag of them before they warm them up. So now they're in the freezer, and if I want a few saussies, I just microwave them for 2 minutes.

Think I saw those Granby Easy Cook sausages in Dunnes Newbridge last week.

Pretty sure there was a 10/15 minute cooking time on them though. Must go back and check for definite.

It's the way they're cooked, not the product so much.

You'd never deep fry or rotisserie a sausage at home or bathe it in that much salt to be honest.
