Restoring an oak table - advice appreciated

Hi all, just looking for a bit of advice on doing up this oak table.

I have scraped the surface with a carbide scraper and then applied two coats of Danish oil. As you can see in the picture, there's a good bit of variation in the colour with some parts quite dark and others light.

Any tips on what I can do or should have done differently? Thanks for any help.

The patchiness is presumably down to whatever was previously on the table top and how much of it has been removed. It would seem likely that you just keep sanding till its all the same. However, 2 coats of Danish Oil is not nearly enough it will take maybe 5 or 6 for the first time over a ew days, then topping up every 6 to 12 months, depending on how much use it gets. More coats of oil might even it out a bit.

Seems well sanded to me. Unevenness is just slower drying. Looksee is right, should even out after a good few coats.
