Making a soup with lime juice, romaine lettuce, beef stock, white onions, carrot, glass noodles. I’ll probably throw in some Thai paste and sweet chili sauce as well. Suggest a meat or an ingredient please?

For that base I would have said it has to be chicken but the beef stock kind of muddies the water somewhat. I'd add lentils as well.
