What are your thoughts on Sumo Deadlift in relation to muscle development for the general gym goer who focuses on aesthetics rather than strength/power?

I normally do a standard romanian deadlift (as thats usually what any program i'm doing has called for) but were I to switch it out for Sumo, I'm working different muscles and arguably not working as hard(?) due to the shorter range of motion (for me / most people).

If sumo was easier, everyone would be doing it. It works for some people, ie is more effective for pulling more weight than conventional, than it is for others.

No harm in changing over and seeing how it works for you and changing the muscle fibres in the hamstring worked by a different movement. But it takes a while to get the technique right so in the short term the stimulus would be lower.
