Any of John Woo's Hong Kong stuff. Of course it's OTT but it's beautiful OTT:

Why have two hands and only one gun? :D

Of course the shootout in Heat is also amazing. Apparently it was taught in military academies on how to hold an urban shootout while surrounded. Although that may simply be an urban legend (No pun intended).

Some of the shootouts in Smokin' Aces were good too:

Shootout at the end of State of Grace was great, would've been fantastic if it wasn't for the super slow motion camera work

While a fantastic movie shootout, the sound especially, I doubt it was taught to any one. The shootout covers basic fire and move. One guy provides covering fire while the other other guy moves and then switch. Nothing innovative there. Kilmers much vaunted mag change was nothing. Run of the mill. Well done for an actor but standard fare for anyone who knows guns. Also Kilmers and De Niros mags seemed to have a lot more bullets than normal.

Kilmer banged out about 100 in the moment he realised he was spotted at the bank.

Open Range shootout was great. For realism watch Saving Private Ryan and Band of Brothers. Nobody gets shot and clutches their chest crying "Gahhhhh" like in the cowboy movies. Normally you just drop dead like a ragdoll.

Apart from Mike Hammer who got shot so many times in the shoulder and was able to carry on that it was taught to the US Marine Corp.

How many shots from that six shooter? 15? Poor continuity. Disqualified

The Raid is a great action movie, including this shootout when it all kicks off:

The gang war shootout that was cut from the second one is also excellent:
