I go to the gym around 8 or 9pm. Problem is I eat my dinner early in the day and don't like to eat much protein in the evening as it affects my sleep. Can I just have a light snack like fruit or toast after the gym ? As I do get enough protein during the day, like at breakfast lunch or dinner.

How about a glass of milk or hot chocolate made with milk? It will help you sleep and give you a bit of protein.

If you go at 8 or 9pm, you likely don't need to refuel? You're not going to be doing any stressful activity afterwards.

The importance of the time of day you eat, pre/post workout has been largely inflated. I imagine it only matters if you're doing serious body building or getting ready for a show.

Eat clean, get into a regular regime and you'll be fine. Make sure you're hydrated during and after a workout and that's about it!
