Horse meat and sheeps testicles

    We had this over in Belgium a couple of years and it is truly lovely. Pony belly as the main, and the sheeps' bits as the starter. It is something that we'd like to try again and to do ourselves

    However, where could you source the meat for this? Does anyone know where either of the above could be sourced? Based in Dublin.

    Butchers in general shy off horse meat in Ireland. I've eaten it, it's fine but I can't see the appeal over beef

    Suspect it's because of the pervasive influence of horse racing around the country more than tastes.

    A proper butcher can obtain the sheep balls if you give them notice. They may find it s bit odd though!

    If a butchers mostly sells prepacked meat it's not a real butchers - find one with actual sides of beef/pork in the freezer and probably the tacky red/green plastic grass in the display to get one that works with the carcasses
