Evening meals

    Change in family situation means I have decided to start having my main meal at 1/2pm at work rather than in the evening.

    Trouble is I'm struggling to find things to eat in the evening, and tend to be defaulting to cereal, toast etc.

    Any suggestions for things I can whip up in 10/15mns for 500/600 calories? Best I've come up with so far are stuffed portobello mushrooms.

    What would you have had for lunch?
    Wraps, Salads, Sandwiches, Paininis, Soups.

    Chopped/O'Briens etc aren't available late, though I suppose I could get to making some soups and salads.

    I personally love a couple of rounds of toast if I'm eating late in the evening! But it wouldn't be any less (often more) calories than a "proper" meal, and is easy to get sucked into having something else. But eggs would be my go to quick and easy - scrambled, omelette, poached...

    If you're stuck for time, you could batch make and defrost/ re heat, same as you might be for your lunches. If you don't mind using prepared jars, you'd have lots of options at 500-600 calories in 10-15 minutes, like pasta bolognese, chilli etc. Actually, even making with passatta/ tinned tomatoes you're under half an hour.

    Soups and salads and all that are very handy to make up. I usually make a batch of lunches at the weekend. On days I have my main meal during the day, I have my lunch in the evening.

    Or make a batch of anything at the weekend and divvy it into appropriate portions.

    Also, just up the recipes for weekend family meals so there's extra portions to freeze/ use at the start of the week. Say you'd usually make for three portions on a saturday (2 adults 2 children), up that recipe to 6, and that's 3 for the week/ the freezer for pretty much no extra effort.

    Would you make a normal dinner and bring it in for your lunch? You can make extra and eat the rest in the evening without bothering about cooking

    simple things I do is hard boil half a dozen eggs, you then have them handy for salads when you need them, oven cook a whole chicken, leave in the fridge and you have a handy source of chicken for whatever. Batch cook and use or freeze soups, bean chilies , lentil dishes.
