Can I just clarify a few things and I would love feedback from anyone who has followed these eating plans. I know I am mixing these two plans together but this seems to what gives better results.

Monday -start eating at 11am - finish eating 7pm - total calories 1200cal
Tuesday - start eating 11am - finish eating 7pm total calories 500 cal
Wednesday -start eating at 11am - finish eating 7pm - total calories 1200cal
    Thursday - start eating 11am - finish eating 7pm total calories 500cal
Friday -start eating at 11am - finish eating 7pm - total calories 1200cal
Saturday -start eating at 11am - finish eating 7pm - total calories 1200cal
Sunday -start eating at 11am - finish eating 7pm - total calories 1200cal

During the 16 hour fast is tea, miwadi (sugar free), water or diet drinks allowed?
Only exercise on 1200 cal days?

    Any advice appreciated......

500cals on 2 days? Yeah good luck with that and the (lack of) recovery

What are your stats - age, weight, height?

The reason why the weight loss is at a standstill is simply because you’re not in a calorie deficit. Eating well is great but it still won’t matter if you’re not consuming less calories than what your body needs.
You honestly don’t need to take this 16:8/5:2 approach because when you take in your calories makes absolutely no difference - the only thing that matters above all else is the total number of calories you take in over a day/week. But if that helps you control the calories then by all means work away.

Congrats on dropping the 10lbs but the issue here is that you then require even less calories than before. You need to readjust your calorie numbers every few weeks after dropping a bit. You’re most likely still taking in the same amount as you were some time ago which means you’re no longer in a deficit, hence the lack of further weight loss. Do you track what you consume?

i remember michael mosley , the guy popularised the 5:2 saying that 4:3 is better but that people would be less likely to do them, so you have that to ramp it up a level . i'd leave out the miwadi , its possible your body releases insulin expecting sugar so that would be counter productive, maybe replace with water and some lemon or lime in it.

also if you are exercising and there is no reason not to do it on your low cal days , check your waist measurement, you might be dropping fat but not weight which is just as good

    Are you tiny?

With moderate exercise its hard to believe that you're not starving yourself like crazy at 1000kCal / day avg. Sounds like inaccurate counting to me.

I'm doing 5:2 diet the last few weeks and am loosing an average of 1lb a week which is what I want. I'm finding it great and am seeing quick results.
I am eating normally on the 5 days. I'm not calorie counting at all on those days but I am naturally cutting back on any high calorie foods.

OP your calorie restriction on those dates is probably pushing your body into starvation mode. Plus you are leaving it very late to eat on those days. You should be eating earlier than 11am.
Why don't you increase your calorie intake on those days to say 1600 and see what impact that has on your weight loss?

Lol there is no such thing as starvation mode. It makes absolutely no difference when you eat, why would it matter if she’s eating late?
Also, you can’t take in more calories and expect to lose weight. That defies the laws of thermodynamics.

its complicated , its one thing knowing the number of calories going in but you have less information about what your body is doing with them and obviously the quality of "the calories" is important.
There was a guy in the UK who went on a 21 day diet eating a 5000 calorie high fat diet, he put on just over a KG , he repeated the experiment with a high carb junk food diet for 21 day and put on 7KG. He was going to try a whole foods but carb heavy diet for the same period, the expectation being he'd split the difference between the other 2.

That expectation is bonkers. Do you have a link to this guy’s experiences?

It doesn't matter when you first eat. 5:2 is no different to 16:8 - they're both tools/'protocols' to reduce caloric intake.

It's like someone telling you that you shouldn't be eating so little on your 2 low-calorie days.
