    Can anyone recommend a source or book that will in layman's explain the difference between gluten sensitivity and a wheat one?

    He's tried the usual suspects on FB and the rest, it's outside his deadline to wait for their responses.

    Gluten is in loads of stuff like wheat, barley, rye, and malt.
    Wheat only intolerance will presumably be just that.

    Don't know of any books or other sources though sorry.

    Some people have an allergy (immune system reaction) to various components of wheat.

    Others have an intolerance towards a protein called gluten which can be found in wheat as well as other grains such as barley and rye.
