i think the leader pays monthly but collects the year off the other 5 under a boards trust agreement

For anyone who has setup a family, do you do it with a new email address for that purpose or is your address etc given out to people you're sharing it with?

You don't need to give them the email that you use for spotify but they'll still need your email if they're paying by paypal. You'll need their spotify emails to add them to the family plan.
