    I was under the impression that most jars/cans of sauerkraut was pasteurized. If that jar was not in the chilled section in the supermarket I would presume its pasteurized.

    I'm afraid it is pasteurised. Still tastes nice! I have seen open containers of Sauerkraut in Polish shops, where you can buy any amount you like. That should be unpasteurised.
    Alternatively you can make your own. It's fairly easy.

    Just make your own, you can make huge quantities at a time that last for months.
