    Generic form-moulded beef burgers from the local butcher, sauteed mushroom/onion/worcestershire sauce/paprika topping, tomatos, burger sauce and brioche buns

    First outdoor cook of the season probably made this taste even better than it would have already.

    Chicken wings with made up spice rub, with another batch after. Philadelphia, chive and yoghurt dip. Really should have used mayo as well to get the fat content up.

    Didn't take any pics but had some family around. Pork neck slices breaded, browned and cooked for about an hour in the oven. Carrots, green beans, mash, gravy and apple sauce with ginger and sage.

    It's really nice. My mother used to do breadcrumbed pork chops, in the oven. They're lovely. The meat becomes lovely and soft while not becoming dry like pork often can.

    The pork neck slices worked well and were very economical.

    Our main oven has stopped heating for the third time so we’re confined to the grill/top oven for Gesture dinner.
    Lamp chips with Gratin Potatoes and Garlic Beans.

    When I was buying the chops yesterday, the butcher had huge turkey legs so boned, stuffed and rolled one to make two roast dinners for the future. I’ve also reduced the stock for a soup or something tomorrow.

    I was watching MasterChef Australia the other night when they have to make something crispy or with a crunch. My girlfriend asked me what I'd do and I had this idea. A chicken mille feuille essentially. It was my first attempt at it and I reckon there's things that can be improved but overall I loved the idea and it tasted great.

    Mash at the bottom, then a sous vide chicken breast, sage and onion stuffing, crispy chicken skin, another breast, sage and onion stuffing, more crispy skin and then gravy on top. I thought it visually looked rather interesting. Classic flavours that worked well but as I said earlier, I reckon it could be improved.

    I'd slice the chicken breast in two rather than serving two breasts. (assuming you are looking for feedback)

    Yeah, I was thinking two breasts was a bit much. They weren't full breasts though. I flattened them a bit before the sous vide and then trimmed them into a rectangle for aesthetics. Cheers for the feedback!

    I had lots of leftover steamed sweet potato after batch cooking for the baby, so I mashed it, added some flour, egg, salt, pepper and a pinch of sugar, combined and fried spoonfuls in olive oil.

    I mixed it together in the food processor but next time I wouldn't do that, I'd just mash it for a better texture. It was like pancake batter and I was looking for something more textured.

    The taste was delicious and some garlic would have been great in them too I think. A creamy dip would have been a nice accompaniment, perhaps a good garlic sauce.

    The baby milled about half a dozen of them, too.

    Amongst other things... More fritters. Going fritter mad so we are. These are broccoli, cheddar, eggs, flour, breadcrumbs and black pepper. Really good and lots for the freezer.

    I've never tried making fritters, thinking they would be too oily, but I might give them a go in the air fryer?

    I don't find them oily at all! Use a neutral flavoured oil and ensure it is hot before adding them, so that the fritters are crisp, and then drain them on paper towel.

    You can use the air fryer for sure but they will be much drier and will have a different texture. Worth a try though!

    Tapas. Frito misto. Buttermilk chicken with cashew nut and chilli crumb and peanut sauce. Korean pork belly with butter bean salad, duck confit with onion marmalade and bruschetta. Beetroot, sweetcorn and slaw salads.

    Chocolate cake with meringue and raspberry sorbet. Raspberry cheesecake with forest fruit compote. Pino grigio and pornstar martinis.

    Roast chicken dinner last night with gravy, carrot and parsnip mash, peas and roast potatoes. Not exciting but always a favourite.
