The higher percentage cocoa the better. My aim is generally 70-90%. Anything above that is way too bitter.

Maybe you just haven't found the right 99/100% yet :D

Seriously, Vivani 92% or 99%. Thank me later :)

OP, pretty much all 70% or 85% bars have the same ingredients (albeit in different ratios of mass to butter) so they are pretty much broadly the same nutritionally speaking - cocoa mass, cocoa butter, sugar and sometimes some vanilla.

I'm not much of a chocolate eater, and I might be wrong. But I was under the impression that the % of dark chocolate referred to the amount of cocoa solids. Any cocoa butter in the recipe is outside of that. Or is that not the case.

    Thanks guys.

    Where do you get Vivani?

If you want to keep costs down, Aldi's Moser Roth 85% cocoa solids chocolate is really nice and inexpensive :)

Woops you could totally be right - sorry! I always assumed that they were just referring to the cocoa content e.g. on a Lindt 85% bar there is around 15% sugar so I assumed that the other ingredients comprise the 85% (cocoa powder and butter) - perhaps some liberties are taken these days with some bars being 85% cocoa solids and some just 85% cocoa?

You can get it in Fallon & Byrne and Nourish in Dublin or some of the smaller artisan type shops (as well as online).

I think you're actually right. I checked it there. Even though they saying to 70% cocoa solids. They ate referring to all cocoa not just the actual cocoa solids.

So you could probably make a 70% "dark" chocolate, that's most cocoa butter, like white chocolate.

I have two squares(20g)of Lindt 85% chocolate every evening after dinner with a cup of tea.

Some bars are processed with alkali which is supposed to reduce the amount of flavanols in the product. There seems to be no rhyme or reason to it either so its hard tell without researching.

For example in the Lindt range, the 85% isnt processed with alkali whereas the 90% is. Its the main reason I buy the 85% bars as I dont mind the bitterness at all.

How did you find out the way they are processed?

The Lidl Arriba Superieur 81% Cocoa tastes good and is great value too! I allow myself 4 squares a day and it keeps me away from the real chocolate treats!!

Got a 99% O'Connaill's bar there last week. It's edible on its own, but not exactly enjoyable. Will have to melt it into something and stick with the 80-90% stuff...
