Healthy omlette recipe?

    Hey guys

    I was wondering if anyone could give me the recipe(s) for healthy, low fat omlettes. On a mission to eat more healthy and reduce my body fat and I read that omlettes are super healthy. Thanks! :)

    Eggs are one of the most nutritional foods you could have.

    I fry up mushroom, onion, peppers (if I'm being bold some panchetta also) in a little olive oil, add in 3 whisked eggs and start moving it around the pan gently. Just let it settle then on a medium heat. When you can see the top starting to set crumble over a little feta or goats cheese (strong tasting so a small bit goes far)

    Finish under the grill until bubbly and there you have it!By no means a recipe as such but it's what I do :)

    Alternatively you can omit one of the yolks and have 2 whole eggs and one egg yolk to bring the calories down.

    Just one question - what do you mean by finish under the grill? :) Never cooked an omlette in my life so totally new to what is involved in it haha!

    Basically, to make the omelette, you whisk the eggs up in a bowl, and put a bit of oil into a frying pan.

    Then you pour the mixed eggs into the pan, and put your toppings in (whatever veg or meat you're using). Leave it to cook for a minute or two, you'll notice the edges cooking.

    Once the edges are cooked, the bottom of the omelette is cooked. The top isn't though, so you stick the frying pan underneath a heated grill for a minute or so, to cook the top.
