Low GI vegetarian diet

    Hi all,

    Would like some advice. Was in a low GI diet when pregnant last year, had gestational diabetes so had no choice. Lost 3 stone while pregnant but put it all back on as my baby was sick and spent 3 months in hospital so healthy eating went out the window. But ready now to lose weight and eat healthy, not weighing myself because I will be too obsessive about it but making lifestyle changes and getting more exercise.

    So have been eating low GI for past few weeks and feeling better already. Clothes bit looser and getting out walking as much as I can.

    But I am getting bored with my food already. I don't eat meat or fish so it's hard to make nice food without loading carbs. Typical day would be weetabix for breakfast, eggs scrambled with loads veggies, topped with cheese and low GI toast for lunch and dinner would be veggie sausages with veg and small amount of potatoes. 2x snacks a day would be fruit. I eat a lot of quorn foods (ones without breadcrumbs) and 2x eggs everyday. Weetabix isn't great breakfast choice but can't stomach porridge and can't eat eggs twice a day.

    Have very unhealthy eating habits so I need to stick to this long-term. I really want to change my eating habits for good so am seeing this as a lifestyle change. But am afraid I will get bored and slip into old habits again. Anyone have any suggestions or advice for me? Don't want my son to be ashamed of me when he is older or follow in my footsteps with unhealthy eating.

    I find chickpeas can be great (in fact beans etc. in general - loads of different types to try). Could sub them in instead of the potatoes maybe?

    Also could add in some 0% fat/no added sugar greek style yogurt (don't go for the flavoured ones as they are full of sugar) as a snack instead of fruit - both would boost up the protein and keep you fuller for longer.

    I'm not a vegetarian myself so I am sure others can advise better! :)
