    I made Madeleines over the weekend but they didn't turn out great. They taste fine but the texture isn't right. They're an eggy sponge mixture, basically, but whenever I make an eggy sponge it gets like a thin layer on the top that comes away from the rest of the sponge. Anyone else get this or know what I'm doing wrong?

    I made a coconut and lemon sponge with lemon curd and buttercream filling... it was nice but some recipes just get on my nerves. The lemon curd wasn't in the list of ingredients it just appeared in the method, ingredients said butter then the method said unsalted butter. Also it took about 30 mins longer to bake than it said!

    I always use regular butter where it says unsalted butter and never had any problems. I can only ever find tiny expensive packages of unsalted butter in the supermarkets here!

    Oh I did as that was what I had it just drives me mad when people are so imprecise when putting together a recipe

    Yeah I totally agree, some are so badly written. I was making a dessert recently and accidentally added 50% more sugar than I was supposed to, because there were 2 different parts that needed sugar but they only listed the total amount in the ingredients list.

    I had a book once that had a recipe that had chorizo in the title and quite clearly visible in the picture but didn't list it at all in the ingredients.

    Photo not great, but I made a very tasty "key" lime pie yesterday (1/2 quantity so thin slices).

    That looks lovely. It's one of my all time favourite desserts.

    I stopped making lime pie thanks to the fact my husband is such a mammies boy. It was his favourite dessert. He said he was going to bring a slice to his mother. I said "Dont. Because sure as hell there will be something wrong with it".

    Sure enough it was "too sweet" and I was annoyed at just how many times it was mentioned that it was very sweet and luscious. That evening he said "well it is very sweet in fairness........" and that was the end of my line pie journey.

    How many days/weeks did you send him to the doghouse for that little cracker? And has he even realised why he was there? ;)

    (If I stopped cooking things Mrs G! criticised, she'd get nothing! :eek:)

    I'm useless at baking but made a pineapple upside down cake on the weekend. It was actually really tasty :)

    Looks lovely! - I always wanted to make one, I think there was a picture of one in my school home economics book and it just looked so tasty and nicely old-fashioned. Now that I actually have my very own tins of pineapple and glacé cherries, I just might go ahead and do it :p

    I sprinkle a little flour over apple tarts before putting on the top pastry. It thickens the juice, so should help with the lemon and apple tarts if you don't want to have a less lemony flavour.

    Thanks! For anyone wondering, the icing is mainly Biscoff flavoured, with chocolate fudge ears and vanilla eyes. I make the biscoff icing myself, but cheated with betty crocker for the rest. I was under time pressure and couldn't make them all at once. First time I've ever cheated with icing but oh well!

    You can get Biscoff spread in Dealz/Dunnes or online, in either a smooth or crunchy variety.

    Cream 250g butter/marg, 200g of Biscoff & 500g of icing sugar and you're done! Tastes exactly like the biscuits! It's a great versatile icing!

    Fridge was overflowing with lemons so I made some lemon meringue cupcakes.
    It was my first time making lemon curd and was really happy with the result!

    Seeing as we don't have a, Assembled anything tasty lately thread, I'll put these here.

    The Irish Smore. I remember a girl in my class brought these in to school for a bake day.

    I'd like to get the chocolate looser to spread more over the thing.

    Digestive, marshmallow and chocolate. Not so pretty looking but tasty all the same
