I left my courses blank in the hope to fill them up in May but now I'm paranoid my application will be cancelled because I cant alter it as its past March 1st

CAO reopens for modifications later in the year, i think at the end of april (not too sure?) and you can add any course you want as long as it isn't restricted entry e.g courses requiring a portfolio, the hpat etc
