Low Cal Hot Lunches

    I'm sick of salad and cold cuts so I'm looking for suggestions for low calorie hot lunches, preferably which can be prepared in advance at the weekend, frozen and then microwaved in work. I have some nice handy soup recipes but I was hoping for some more inspiration ...? Thanks! :)

    I'm not entirely sure about the calories per day, it's more about trying to organise a new routine which I can organise in advance and not get side tracked.

    It would involve fruit for breakfast, this lunch and a carb free dinner of, say, grilled lean meat/fish and vegetables.

    I guess if I'm aiming for @ 1,200-1,300 calories per day, the lunch could be @ 300/400 ...?

    Stews and curries are great for reheating and sometimes taste better the next day. They are also easy to make low cal.

    Thanks. I suppose I didn't think of them because (in my head anyway) stews have potatoes and curries need rice :)

    Potatoes are pretty low calorie, you're talking about 140 cals for a good sized one and they are filling. It definitely makes stew less miserable.

    Cauliflower rice is pretty good too, google for a recipe.

    Made a stew without potatoes recently enough. Mostly because I forgot to write 'potatoes' on the shopping list....

    Celery, carrots, parsnips and mushrooms went in.

    I did not miss the potatoes, if i'm honest.

    Just make a small portion and mix it in with your curry or rice. You don't need much!

    Fair point well made Mongo. I've also remembered I love chilli and rice so that's another freezeable option. Thanks folks!

    Scrambled eggs are also a handy lunch to make in 2-3 minutes.
