Leavig Cert third language alterntive

ive done my leaving cert and unfortunately built it entirely around engineering which I don't like I want to do psychology in an NUI and don't have a third language are there any courses or alternatives that I can do which could prove my high standard of a chosen language. im willing to do it during the summer
