Only really possible for beginners and people who are on PEDs , Work out your TDEE using this http://scoobysworkshop.com/calorie-calculator/
Throw that list of food into myfitnesspal, and see what calories / macros come out the other side
Eat at your TDEE to maintain weight, Eat more to gain weight , eat less to lose weight.

Can you even have weigh to lose when you're 11 stone and 6 foot?

Also, can you maybe expand on 'some weights'? It doesn't sound like you'll build muscle with 'some weights'.

Bloody hell. According to that link I need to be taking in 5600 calories a day for a clean bulk. I thought I was doing well with my current 4500 calories a day

As Papu said, you can't really do both at the same time unless your genetics are beautifully constructed or you're a beginner!

You'll have to bulk and then do a cut further down the line.

I must have entered a figure wrong so :D but I tried 3 different times. Thanks for checking. That figure sounds way more realistic.
