Cooking for a Vegetarian

    I am inviting a girl over to my place and am planning to cook for her tonight.

    Only one catch - she is a vegetarian.

    Thinking of making her veggie lasagne.

    Any better suggestions?

    Veggie lasagne is nice my wife is a veggie and its one of the things we have on a regular basis. Make it with quorn and have it yourself and make an extra good impression!

    Quorn make some great meat substitutes. The mince is fantastic. You can use it in the lasagne or in a bolognese (I end up eating the bolognese at least one a week because it's so simple and quick to cook).

    Besides that there's chicken bits (Stir fries and curries) and stuff like meatballs. Best thing to do is toddle to tescos (tescos generally have more quorn products than Dunnes or Supervalu) and see what you can make with it.

    btw, bisto is veggie. So it's always possible to do a roast and just use quorn fillets. In the end it all tastes of gravy anyway.

    Is it just meat she won't eat? I'm not too familiar if the phrase nowadays covers 'animal products' like cheese, etc?

    I'm a fan of making herself a nice risotto myself. Veggie stock, few sticks of celery, white wine, butter, Parmesan and various mushrooms to top it off?

    Just a thought.

    She might not like meat substitutes, OP. Maybe check with her?

    Can't go too wrong with a chickpea curry or bean chilli. Or some pasta dishes, pasta with tomato sauce and roasted black bean balls with garlic and chilli or broccoli and tomato pasta with a white wine sauce.

    Go to the Vegetarian forum and pick up a few ideas.

    Parmesan isn't vegetarian... and you'd want to make sure the wine you use is okay via Barnivore.com.

    OP, think up 3 things you could make and ask her which she'd prefer. Lasagne is usually okay, but I'm a veggie and hate lasagne (just cos it's ew, not cos veggie). Keep it simple, and see which she prefers.

    This sausage and mushroom pie is ridiculously easy to make and absolutely delicious btw. Linda McCartney sausages, from the frozen section in most supermarkets.

    For wine options, Marks & Spencer and Aldi write it on the bottle whether it's veggie or not. Saves you googling the brand.

    I am all but vegetarian but would never use quorn or meat substitutes. Eggs and cheese if she is not a vegan. Costs too much any other way.

    Veggie burgers Jamie oliver recipe.. My favourite dinner in the world with some corn on cob.. Just mix chickpeas and mixed beans in blender with paprika,,flour, lemon zest and coriander. Mix into balls then flatten in to burgers and fry on low heat.. Delicious

    My missus is a veggie. She laughed for hours at all your veggie jokes as they were all very original.

    My two cents is that I would never serve a date anything from a packet or a freezer. The Risotto suggestion is the best so far. Takes a bit of time to do risotto correctly though. Add the stock a ladle at a time and wait for the rice to absorb it before adding more. Butternut squash and sage risotto is nom.

    If you think she likes a bit of heat I do a mean veggi chili:

    Finely chop half a pack of Aldi mixed chilis (a mix of hot and mild ones) and 3 or 4 cloves of garlic. Dice peppers, onions and mushrooms. Slap it all in a big pot with a good glug of olive oil. Slowly sweat this down over 5 to 10 minutes.

    Add a carton of passata and 2 tins of chopped tomatoes. Drain and rinse a can of kidney beans. Slap it in the pot with half a tube of tomato paste. Give it a good stir then add:

    1 tsp paprika
    1 tsp smoked paprika
    1 tsp hot chili powder
    Juice of a lime

    And a generous splash of:
    Veggie wostershire sauce (non veggie I'd ok if she eats fish)
    Decent tomato ketchup
    Tobasco
    Tobacco habenero
    Franks hot sauce
    Any other hot sauce in the cupboard - I usually have around half a dozen on hand. The variety really adds to depth of flavour.

    Season to taste and allow to reduce for half an hour of so. A couple of minutes before serving add a ridiculously large amount of chopped coriander. Make sure to finely chop the stalks and add them too.

    Serve with guacamole (2 ripe avocados, juice of a lime, more ridiculous amounts of coriander), sour cream and taco shells/rice/tortillas.

    Quorn cooks in a couple of minutes. In fact it's more heating than cooking. If I'm throwing a sauce on top the whole thing can be done in less than 10 minutes.

    A risotto is a good idea, but some people find it difficult enough enough to make. Which I don't understand because it's very easy. A mushroom risotto is a safe one..

    Some kind of pasta dish is easy to do.

    My favourite is curry. I always make it at home and my boyfriend, who eats meat, loves vegetarian curries. Maybe this: Creamy veggie korma. At least it won't be too spicy, some people don't like spicy food.

    I wouldn't go with Quorn or anything like that unless you know she eats them. I personally hate all that stuff.

    It's the addition of rennet to the cheese that makes it not vegetarian. Lots of cheese varieties can be gotten without rennet, so they're fine, but Parmesan always has rennet in it. Which is why it's never veggie friendly.

    Someone please clear this up for me.

    I suggested the risotto, along with not knowing exactly what a 'vegetarian' is, in the broad sense.

    I thought it was just 'no meat' but then you hear some eat fish. So, fish is ok but a cheese that's got rennet in it, isn't?

    I thought that was Veganism?

    Or are the lines all blurred nowadays?

    Best thing to do is just ask the girl what food she likes.

    She might eat meat substitutes such as Quorn, she might be disgusted at the idea. Maybe she calls herself a vegetarian but eats fish. Maybe she's not vegan but doesn't eat rennet. Maybe she's a bog-standard vegetarian but isn't a fan of traditional vegetarian favourites such as pulses and beans and chickpeas.

    You could just say to her that you've no experience cooking for vegetarians. Ask her for her five favourite dishes, and look up a really good recipe for one of them. That way it's still a surprise, and you're putting a lot of thought and effort into it, and you can be pretty sure it's something she'll actually like. Instead of just giving her something that "most" vegetarians tend to like.

    Pescitarians eat fish and vegetables, but no red or white meat. Sometimes it's easier to say you're a vegetarian than try to explain.

    Vegetarian means someone who doesn't eat meat or by-products resulting from the death of an animal. So rennet, gelatine etc etc is out.

    Vegan means someone who doesn't eat anything that comes from an animal, at all, whether it stayed living or died. So dairy, honey etc is out.

    Sometimes people are not strict on the by-products thing but still feel they identify as vegetarian. People who eat fish and/or chicken and call themselves vegetarian... Are idiots. Usually saying 'a fish is not an animal, it's a fish ' or something just as idiotic.
