I eat primarily a paleo diet.
I gave however lately been having some organic quinoa.
Cooked in chicken broth and then sprinkled on a salad.
    I love it.

    Really fills me up.
Sometimes have a bit with curry too.

Would love to know what other people think of quinoa/do with quinoa?

If it's good enough for NASA, it's good enough for me! :)

There's a recipe in the Cooking Club for a Quinoa pizza dough that I've been meaning to try, looks delicious.

It is delicious. Skip the recipies with baking powder. Simple is best. Soak the quinoa in water overnight, blitz it, bake, eat. Its good enough to eat on its own, even witout a topping.

Chiming in to say I also think it's delicious. Simple is best. It can be treated like rice or cous-cous, so those recipes also apply well (eg using broth/stock, and tomatoes). You can also make pilafs and burgers from them, though paleo might shape your options.
