At the moment if I want to back up my emails etc in outlook I eport them to a PST file. I have four email address and have to do each email address individual so can be quite time consuming.
IF I simply copy the outlook files in "my doc's" folder would this work as a backup copy?

Yes the youremailaddress.pst makes for a good backup.
I copy mine to another drive every month.

However if you are restoring from a fresh install of windows/office you will need to enter your email, password and incoming/outgoing server locations.
So it's handy to take note of these and store them safe somewhere too.
