no milk then? how about using almond milk as a substitute for milk?

No need for milk in the recipe above, the eggs and banana bind really well. The milk is only necessary (I think, I'm no culinary expert :o) when there's dry ingredients like flour in the mix.

Even better is to eat the banana while you scramble the eggs :)

What is the unhealthy ingredient you are avoiding in regular pancakes?

If you only eat them once a year, would you not just have one or two and try to go easy on the maple syrup?

if youre avoiding milk and or flour then the banana egg pancake is the way to go. they are a very good substitute for flour pancakes.

but avoiding either milk or flour is not going to make one jot of difference to your healthy diet if the rest of it is ****e.

as long as they dont become a staple of your diet it is fine to eat milk and flour and have a perfectly healthy diet.

No one ingredient, or lack of ingredient, is going to make it healthy, it is a combination and balance of everything you eat and your whole lifestyle.

TLDR, its pancake day, just eat the f in pancakes

To add further jazz to this recipe throw some porridge oats in there too.

I made coconut pancakes once, using coconut flour from Holland & Barratt. They were absolutely vile, they went into the bin. I still almost gag when I remember what they tasted like.

I eat these pretty much everyday:
    3 eggs
    5 scoops of porridge oats
    Teaspoon of cinnamon
    Dash of milk

Pan fried in coconut oil makes two pancakes which I then sandwich together with some good quality peanut butter served with a side of greek yogurt, so good.

Haha yeah coconut flour can be a nuisance to cook with. You need a lot of flavour to kill it off ^^
