I can only agree, wholeheartedly! Delicatessen along with their next film, The City of Lost Children, are Jeunet & Caro's two homages to Terry's movies.

After those two Gilliamesque masterpieces, the duo split, and one of them keeps making more-or-less "kitschy" romantic comedies and romantic dramas (I'm not judging anybody who's into that kinda thing, but they're mostly pretty "girlish" movies and for couples that've recently fallen in love, being the kind of "kitschy" and "schmaltzy" that can be hard to bare for many guys) with a tiny surreal tint ever since, and the other keeps doing sci-fi horror stuff with no relation to Terry's style or themes whatsoever.
