Whats a good healthy oil to make mayonnaise with?, I've used olive oil before but I think the flavor is a bit overpowering.

You can't use extra virgin, you have the buy the light or extra light stuff. I make mine weekly with the light one from Aldi, gold lid, looks a bit like this
