Diabetic Come dine with me help

    I posted this in the food section and it was suggested that I post here:


    Last year the menu selection was fairly easy but since then my father has been diagnosed with Diabetes and is on a diabetic diet. This is making it very hard for us to select a menu. We have picked our mains which is Fish and Chips, it sounds basic but thrice cooked chips with three types of fish and pea purée.

    I am finding it difficult to select a starter and more so a dessert, I want the whole thing to be suitable for a diabetic as I want everyone to have the same.

    So has anyone any good tasty suggestions?

    Peach Melba was always the suggested dessert for diabetics when I worked in a hotel restaurant.

    It really depends on type diabetes(1? 2?) and treatment that your father is undergoing(injections? pills?), you should also ask him. Diabetics do manage their issues themselves and they do not have to follow strict diets all the time - they may be perfectly fine to eat regular food on special occasions.

    Anyway to make diabetes friendly food, avoid sugars and starch - so I guess chips are bad choice, perhaps use sweet potatoes or brown rice. On other hand fish is excellent food choice. Deserts can be sweetened with xylitol, stevia and numerous other sweeteners with exception of fructose.

    Just avoid fruit and ver sweet desert. Cheese board for desert and any soup or veg dish for starter
