Why Don't The Numbers Add Up? 100g

So I've noticed that the numbers of almost everything on the "per 100g" stats don't add up. For example, look at the stats here for Quorn mince:
    http://quornfoodservice.co.uk/products/quorn-mince/

Adding up the protein, carbs, fat and fibre, you get 27.5g. There's 72.5g missing...that couldn't all be water? It's hardly 70+% water, it would be slush, surely?

In a newborn infant, this may be as high as 75 percent of the body weight
it would be slush, surely? ;-)

    New-borns are kind of squishy...

So it really is just the water content?

Lean red meat or chicken is 25% protein and very little carb/fat/fibre. The rest is also moisture. Not that slushy either!

Look at a packet of oxtail soup etc.. Not much left when all the moisture is gone!
