itunes server ?

Anyone know what the point is of itunes server ? I have a couple of apple TVs & a mac mini running plex (apple tvs just have standard interface). I'd like to hook up a server & run it all from there, but apparently the apple TVs won't connect to it. It has to be a copy of itunes running on a mac or pc..
