I've tried to give this ago, but on the day i'm fasting i get too hungry in the evening and i eat more than the 500 calories. If i was to fast 24hrs from 6pm-6pm the next day would that work as recommended? I'd find that much more doable.

Why dont you give the 18:6/16:8 version of IF as an easier way to ease yourself into the diet. You have a 6 or 8 hour eating window where you can eat what you want (within reason) and then you fast for the remaining 18/16 hours of the day. You can read up more on it at http://www.leangains.com/
Martin Berkhan is the self professed godfather of the leangains approach.
I found this approach a lot easier then starting off from scratch and limiting your calories to 500 a day or 24 hour fasts.
