Simple vegetarian options for 5:2 diet?

    I'm not sure if this is the right forum for this but I'll post anyway:D I'm going to start the 5:2 diet with my husband next week and I'm a vegetarian. I'm not really fussy about food and I'm just looking for some basic ideas on hassle free vegetarian foods that I can throw together, if anyone has any I'd appreciate it if you shared them.

    Whats a 5:2 diet? Its good idea for health benefits. im partial vegetarian and fussy eater but its a gradual step adjusting to a new diet.

    Beans are great. Cannellini beans, kidney beans, chickpeas etc... I always eat these on fasting days. I make refried beans but you could also eat just in a salad or mixed in with loads of veg.

    Eggs also good at approx 70 cals a pop.

    Dark green leafy veg is particularly great - you can have tons and tons for very little calories.

    Other things I suggest are watermelon, stir fries, and those super low-cal noodles you can get in the Asian market.

    Kidney beans are very healthy easy to add to meals and spinach as well. Chickpeas good too.

    As above loads of beans, Lentils are awesome too. Leafy greens as above, fresh spinach is a must.
    Quinoa & Goats cheese go real good together.

    Last fast day (I do one meal, rather than spreading the cals out) I had aubergine parmigiana (home made) + a pile of salad leaves. Had it at 4 pm and I didn't feel more than a slight twinge of hunger until 12 noon the next day :)
