How to shallow fry

    A bit of basic help needed.

    I have never shallow fried before but saw a program and I want to give it a go.

    The chef made fish in beer batter and placed it in a pan but it seemed to be half full of oil.

    What oil should you use to shallow fry? Or can you use butter or something else? It seemed like a lot of liquid in the pan.

    And do you have to get a specific pan for this or would a bog standard frying pan or wok do?
