When you look at the 100g nutrition of foods it might say 30g of carbs, 15 or protein and 10g of fat. I'm wondering what is the last say 45g made up of? Is it simply water?

Yeah, usually water. Some other things might have no nutritional values made up of those 3. Most dry stuff still has water, like wheat grain would be about 13% water, so is rice.

You can sometimes use info to find out recipes and proportions of stuff. You will also see some scams people do, like many weightwatcher meals are heavily "watered down" to reduce calories.
