Low Carb foods/recipes?

    Hi guys, been trying to get on a stable diet, this last two weeks been doing a lot of exercise, cut out ALL junk, drinking only water, and aiming to go low carb. Lots of vegtables, some fruit as fruit has a highish carb count, lots of healthy fats and proteins like nuts/seeds, eggs, and also some salad occasionally. I am having a hard time when it comes to picking up good foods that are low carb, snacks I have solved as I just have some fruit or nuts, but meals I find are stale. I'm pretty much living on a staple of 5 foods, I eat a LOT of nuts and seeds (I know they are calorically dense so I watch my intake), an egg with breakfast (maybe one with lunch but never more than 2 a day), lots of veggies, and have some meat with dinner only (chicken, pork mainly)

    I repeat the same meals and foods pretty much all day, I am sure this cannot be good for my diet or my sanity :o I am just wondering am I doing anything bad by doing this? And I also would love to know any more foods I could add to my arsenal, meal ideas, etc, as I have completely cut out rice, pasta, potatoes, so coming up with meals is rly tough! They were staples for me before, I also don't eat chips etc anymore so that limits me even more, thanks for reading if anyone has and I appreciate any feedback you guys have :)

    I got a bit bored of veggies but then discovered oven roasting them. It just adds a new twist. A baking tray with some peppers and butternut squashed, mixed with ground cumin, salt and pepper is great with steak or fish. Even take carrots and parsnips and marinading them in honey and soya sauce before oven roasting is great.

    Glazing carrots with honey and then oven roasting them at a really high heat is absolutely amazing!

    I need to try the soy sauce too - sounds mmm.

    Honey is not low carb :) Have a look at http://www.lowcarbfriends.com/recipereview/ for loads of low carb recipes. I've been eating low carb since last August, and rarely have the same meal twice in a month (apart from breakfast). Last night it was pan fried duck breasts with a juniper, black pepper and orange zest rub, served with sautéed courgettes and broccoli. The night before it was a chicken curry, tonight it's going to be either low carb moussaka or aubergine parmigiana - I could go on. It helps if you enjoy cooking, of course!

    True honey itself isn't a low carb food but it's generally used in small quantities. When I was on a ketogenic diet a teaspoon of that or maple syrup was a welcome flavour change, drizzled over pork nom nom, and not enough to throw me out of ketosis if the rest of my food was in check.

    Low carb, ketogenic is the best ever. I am eating this way since March due to insulin level problems and have never felt better.
