I'm looking to try make/bake some low fat treats. I don't want to use flour. If I were to blend up porridge oats to a fine powder would that be a good alternative to flour. I don't have access to rice flour or any other alternatives!!

    Cheers

I've never heard of oat flour being used as a sub, in paleo baking it's usually coconut flour or almond meal/ground almonds.

I've heard of ground up oats being used in pancakes, never tried it myself though.

Can't get my hands on coconut flour ( small Irish towns eh!!) it's would be ideal for what I want to bake. May just use flour this time.

    Cheers

I make pancakes using oats. Works well for me. Not sure how it would go with baking though. Give it a go as an experiment and see how you get on.

I always use oats as a substitute for flour, when making protein pancakes. I also recently started using odlums wheat bran. Great substitute for flour. Great for making protein pancakes, buns, muffins etc. High in protein relative low in carbs and fats.

I used ordinary flour. It was only one cup. Will let you know how it goes as ground a few oats too. In oven now,

Would defiantly recommend the wheat bran for future cooking. Works well for the likes of buns, muffins. oats work well with pancakes!

This is the recipe I was following. In future i am trying to cut down on wheat so was considering coconut flour or rice flour.

Would either of the above be a good substitute?

    85g oats/oat flour
    150ml milk
    2 eggs
    1 tsp baking powder
    Good pinch of salt
    1 tsp vanilla
Half tsp white wine vinegar/lemon juice.

These are really delicious. I blend the oats and leave the mixture overnight. I think it improves the consistency of the pancake when the oat flour has time to absorb the liquid. I'm sure you could add some whey in without it messing things up.
