Farming with butchery

Does anyone know how easy or difficult it is to set up a small farming enterprise whereby you could raise some basic livestock, butcher it yourself and sell direct to customers on a small basis. I'm a teacher and have a lot of time to kill in the summer so it would suit me to have something like this I could do to keep me busy.

Whether I actually implemented a breeding system or just bought weened piglets to fatten up for the summer would depend on how well I would be able to manage stock throughout the year but I think it would be doable as long as I could get a plot of land close to my home.

Really what I'm wondering is how do you go about doing this, what approvals do you need and from who. I've found butchery training courses but then I assume you have to get some licenses to allow you to butcher and sell your produce? I'm thinking pigs, chickens and ducks - maybe sheep or goats as well.
