Fat content of meat

    So we all know that turkey/chicken/fish/etc is very lean and ideal if you're trying to watch your fat intake, but I've noticed a lot on packaging that the fat content of meat such as duck, beef and pork is comparatively high.

    Would I be right in saying that the fat content of something like a pork chop includes the fatty bit at the top? What about a duck breast? If I were to eat just the dark meat and discard the fat, would it still be classed as a fatty meat? I know mince has the fat and meat mixed together, but if you're willing to get rid of the fat before cooking, leaving only the meat, are all meats not quite similar in their fat content?
