    I'm trying this tonight. It looks fairly basic, but I have everything in the fridge so it's a nice quick meal. The trouble is I'm only getting used to cooking fish, and I've never cooked hake before.

    What temprature should I have the pan at? Also, it recommends using olive oil, but should I use an oil with a higher smoke point?

    depends on how thick the hake pieces are. season heavily with salt and white pepper then 3mins each side in a very hot pan. try one piece first and adjust if necessary.
